Whether you travel abroad or simply into the interiors of India, the most common thing you will find is the use of same spices but the difference in the taste. When you travel north, the spices differ in the taste where you will find the greasy and softness in the tangy flavor with the terrific aromas that tempt you to have the dish instantly. Without the use of spices, India cannot think of making any food item. From desserts to gravies, spices are a must for Indian Food. How do we use spices in desserts, well hunt for the recipe of Sakharamba or sweet-sour Diwali snack and you will understand the absoluteness in spices. The combination of different spices and tastes, create a radical dish in Indian cuisines which more than appreciated even on the international market. Heavy use of cardamom, cayenne, and tamarind appeals a different taste of Indian cuisine that has become favorite in today’s time. Not only foodies, but, nowadays, food chemists, bloggers and western restaurateurs are also taking a considerable heed for Indian cuisines. To add to it, the fashion of serving the food derives the blend of tanginess of Indians. Keeping in mind of these tactics, many Indian cuisine restaurants have developed the essence of royalty and perfection. From Punjabi, to Maharashtrians every cuisine serves their food in different styles. Punjabis like their food with more gravy and spices to welcome every aroma differently. While Maharashtrians like a complete balance of every taste and every crackle in their food. Therefore, you will find a complete rainbow of taste, colour and aroma in Maharashtrian food. Once you shift your foodiness towards the south and you will find a complete package for semi-solids and sweetness in them. Southern foods are mostly made of rice, jaggery or coconut. While you travel east, there is a close proximity of rice and salt more rather than the spices. Although the spices are minimal even so the food from the east creates a new tickle and temptation for their delicacies. From taste to serving, everything have a different meaning and different blend. While Punjabis serve with utmost love and joy for food, Westerns serve with equal love for their ingredients and guests’ nature. The southern like to serve with meaning, sharing and prominent use of resources; every sense of dining is been marked with each different style of India cuisine making its mark.
